Citrus Cake with Chestnuts!


Ingredients: 3 eggs half a cup of oil 2 cups (tea) of sugar 3/4 of a cup (tea) of orange juice 1/4 of a cup of lemon juice 1 tablespoon of baking powder 2 cups all-purpose flour (or your favorite) Zest of 1 lemon and 1 orange Chopped pecans and almonds. Optional coconut and cranberry chips.


Method of preparation: In a blender add the eggs, oil and sugar and beat well. Then add the flour and orange juice until the mixture is very homogeneous. Finally add the yeast and fruit zest and mix gently. Bake in a preheated oven at 180C for about 40 minutes, or until the toothpick test comes out clean. Make the topping as you wish, it can be a lemon brigadeiro, a white brigadeiro or whipped cream as we use.
